Plantains and Overnight Oats

I have only a few more days in NYC with Sandy before I head back to the West Coast to Visit San Francisco for a week and then Hawaii, and I’ve been sick with a cold. Sandy has been busy getting back into the groove of work after unexpectedly being away for a week, stuck in Vegas because of the snowstorm that cancelled our Monday flight.

In between sending some job applications out, writing on here, fiddling with youtube, and taking Olive out for walks, I’ve been trying to find one thing to cook each night to ensure my honey has something delicious and healthy to come home to, with enough cooked for him to bring leftovers for lunch the next day.
